Tofu with tomato marinated sounds yummy and make you feel hungry, doesn't it?
Every time, I cook this dish, it reminds of my home country, Bali - Indonesia, where we eat a lot of tofu and tempeh. It also can be fried and served with sweet sauce (ketchup manis) which you can get easily at the supermarket. Serving the tofu with tomato marinated with rice and steam vegetables are the simplest and best dish for your dinner or lunch ๐
(Firm tofu)
I used organic firm tofu from Aldi. It looks very solid after you fry it. Fry over medium heat for 3 to 5 minutes, which will give you this color.

Tomato and red Thai curry paste are a perfect combination. These ingredients as well as the others in the picture above will be needed in the recipe. Also, if you find it to spicy, I recommended using sweet ketchup (kecap manis) from the supermarket / Asian shop to make it tastier and milder.
INGREDIENTS:
6 Tomatoes, chopped (medium size)
1/2 cloves of garlic, chopped
1 / 1/2 red chili, chopped
1 tablespoon red Thai curry paste
1 teaspoon vegan chicken stock
1 teaspoon soy sauce
1 teaspoon sweet ketchup (kecap manis)
2 tablespoons of vegetable oil (it is also possible to use water)
pinch of salt
450 gram of fried Tofu (firm tofu)
(Kaffir lime is optional)
INSTRUCTION:
1. Fry the tofu with medium heat for 3 to 5 minutes, until it is golden brown.
2. Prepare another frying pan to cook the sauce. Add the oil, garlic, red chili, cook for a minute.
3. Add the tomatoes, and stir for 2 to 4 minutes, until it turns soft.
4. Add the Thai curry paste, vegan chicken stock, soy sauce, sweet ketchup, cook until the sauce absorbs the tomatoes evenly.
5. Finally, add the fried tofu, mix it, in the frying pan with sauce, and ready to serve this with rice and steam vegetables ๐๐
