Yesterday, it was a cooking day for me. I was actually craving for chickpea pesto salad from my workplace @Vegerama. But unfortunately, I did not have work yesterday, so yeah, I made one at home. All ingredients were very easy to get, I got everything from Aldi - Australia. I am a big fan of Aldi! Everything was so cheap and affordable for a University student like me. Also, I got these onion rings from Aldi. The taste was alright, but I think I prefer their vegetable hash brown. I will put the description below for you to make this quick and easy chickpea salad. It serves 1 to 2 people. Enjoy! :)
→You will need:
⧫ 1 can Brown Olive, drained
⧫ 1 can Chickpeas, drained (I boiled the chickpeas for 1/2 minutes and put some salt)
⧫ 2 cups English cucumber, diced
⧫ 2 cups Tomatoes, diced (I used small sweet tomato)
→DRESSING
⧫ 1 tbs Olive oil
⧫ 1 tsp Smoked paprika
⧫ 1/4 tsp Chili powder (Depending how much chili you like)
⧫ Lime or Lemon juice
⧫ Salt and Pepper
(Some basil and red wine vinegar is optional as I did not use any of these two)
→ MIX
Mix all ingredients in a bowl gently and ready to serve.
(I also cooked some onion rings. It is suitable for vegan and vegetarian).
