Scrambled Tofu Euphoria

Are you vegan or just want to try something different? Scrambled tofu maybe an option.
This meal is so good and filling for your weekend breakfast or for afternoon snacks. I used this Japanese style silken tofu for making it, the texture is softer than the firm tofu and also the silken tofu is easier to cook and the sauce to be absorbed.

(The sauce)
The ingredients are so simple and available, everything I bought from Aldi, Woolworths, and my garden. I used nutritional yeast seasoning for my scrambled tofu, which made it, a bit thicker and had a nice consistency. I am not a big fan of spicy food, but if you like spicy, I recommend using fresh green chili. Overall, maybe you can start buying these goodies at the supermarket, and enjoy this meal on your holidays!


(Super easy and delicious scrambled tofu)
Ingredients:

→You will need:

2 Slices of bread 
Nuttelex margarine (optional)
1 Silken tofu
1/2 Onion, chopped
2 Cloves of garlic, chopped
1 Red chili, chopped
1/2 Cup of coriander, chopped
1 tbs olive oil
(Tomato is optional)

→ The sauce:

1 tsp Thai red curry paste
1 tsp chicken stock powder
1/2 tsp turmeric ground
1/2 tsp smoked paprika
1 tsp nutritional yeast
1 tsp soy sauce
Salt and pepper

→Instructions:

1. Mash the tofu. Add the oil to a frying pan, onion, garlic and red chili for 1 to 2 minutes / until it gets brown.
2. Add the mashed tofu, coriander, Thai red curry paste, chicken stock powder, turmeric ground, smoked paprika, nutritional yeast, salt, and pepper, cook this for 1 to 3 minutes / until it smells nice.
3. Toast the bread, add some margarine (optional), and pour the tofu on top of the bread, and ready to serve, enjoy!

Vegan Sunday Breakfast

This is a super delicious and simple vegan dish that you can make at home. You can buy all the ingredients at the vegan grocery stores near you or you can purchase them online. Anytime I see something on special at the shop, I generally buy it straight away and freeze it, because you never know, when you will crave for vegan nuggets, sausages, cheeses, etc. So, it is important to treat yourself with a low budget but still satisfying meal! ;)

(Jumbo hot dogs - Tofurky brand)
This sausage I got it from The Green Edge Vegan Groceries and Cafe. It was on sale, and I purchased this for half price. I used to work there and always stacked up the goodies on the shelves. I kept buying all the food there. I couldn't control myself! I have tried all flavors of Tofurky before, but my favourite is this one. The Tofurky sausages are also tasty for a hotdog with some fried garlic and BBQ sauce on top.

(Classic Blend - Daiya Cheese)
The cheese is to die for. The Daiya cheese brand is so good for any type of pizza and toasties. It melts so well, creamy and delicious. At first, I thought the mozzarella cheese would be good for this. But I want to try to experiment with something new, so I bought this classic blend flavour. That was actually matched very well with my toast. The Daiya cheeses are a bit expensive, but it's worth it! If you are local, I recommend going to the Green Edge Vegan Cafe Brisbane Australia, they are regularly having cheap goodies, including their cheeses and dips. 

"THE INGREDIENTS FOR THE TOAST"

→You will need:
2 pieces of bread
Half of a ripe avocado
Tomatoes (I prefer to use small sweet tomatoes)
Vegan sausage, grilled 
Vegan Daiya cheese
Margarin, salt, and pepper 

→Instruction: 
1. Toast the bread, and grill the sausages for 2 minutes with spray oil, and put the cheese in the microwave for 30s to 1 minutes, until it melts and stretchy and creamy.
2. Add the margarine on top of the toast, mashed avocado, chopped tomatoes, salt, and pepper, grilled vegan sausages melted vegan cheese on top and it is ready to serve! :)
