I like using the kaffir lime because it gives your dish a nice flavor. I have this plant in my garden. The thing that you have to know about this plant is they need to stay warm. Temperate to a tropical climates are ideal for them. They prefer dry winter and hot summer. Type of foods that are favorable with kaffir lime, include curries, green sambal, tom yum soup, and herb salads. I am going to write the ingredients for this nasi goreng below for you to make in your spare time! :)
→You will need:
1 cup of white rice (200grams) (Can use basmati and jasmine rice)
1 white mushroom, chopped
1/4 cauliflower, chopped (Can use Broccoli if want to)
1 carrot, diced
Mock meat (Can use soy nuggets, mushroom nuggets or vegan sausages)
Fresh cucumber
→FRIED RICE SAUCE
100 mL coconut cream
1 tsp laksa Paste
1/1/2 tsp coconut sugar / 1tsp sweet ketchup
1/2 tsp sesame oil
1 tsp garlic paste / 1 clove garlic, minced
1 tsp coriander paste
2 leaves kaffir lime
1/4 tsp fresh chili (optional)
→DIRECTIONS
1. Cook the rice. (I recommend cooking the rice the day before, to dry the grains out enough, and give the fried rice a good texture. Also, to avoid the sogginess)
2. Boil the veggies for 1/2 minutes with some salt.
3. Heat oil in a skillet, add the garlic paste, coriander paste, kaffir lime, and chopped chill, cook them over medium-high heat for about 2-3 minutes. Next, add all the veggies and the mock meat and cook for 2 minutes.
4. Mix the laksa sauce in a bowl. Use coconut cream, laksa paste, coconut sugar, and sesame oil.
5. Add the rice and pour the sauce above, and cook for 2 or 4 minutes or until the rice is hot. Finally, add some cucumber or tomatoes for freshening.
