Veggie Sushi Madness

My second attempt at making sushi turned out delicious. Finally made my own sushi, unbelievable! I dreamt making my own sushi, but it took me a while to make it happen. It was time-consuming and I recommend making your own sushi with your family or friends because it is more fun and enjoyable.  Making sushi on your holiday and eating it on the beach is the dream isn't it?

These all the ingredients for making this sushi, also with sticky rice, yaki sushi nori seaweed that you can buy at the Asian shop, and bamboo sushi roll that I got from eBay. 

I chopped the veggies into long, thin pieces (julienne). So, it will be easy for us to roll it on the mat. The sauces for the rice are coconut sugar, salt, and rice vinegar.

Here, is a tip. To make a perfect sushi, you have to pick the right rice. Sticky rice is good to use, and Japanese style rice might work best. You can also use brown rice.

My cheap, bamboo sushi mat is magic. Firstly, I thought "oh well, why not buy a cheap bamboo mat as I am a beginner anyway". But, it did not disappoint me.  My sushi turned out perfectly, it tastes like sushi that you bought at the sushi kiosks in the shopping center. 

Place your nori in the middle of the bamboo mat, fill it with rice, give a 2cm space at the end of the yaki nori seaweed, to close put some water to make it stick properly, and roll it slowly until it gives you a nice shape. Also, it is important using water to wet your hands, and preventing the stickiness from the rice. Finally, one roll produces 4 to 6 small sushi pieces. 



→ INGREDIENTS - Serve 2 people

For the rice:
2 cup of rice, can make 5 rolls
4 tablespoon of rice vinegar
1 teaspoon of coconut sugar (can use any sugar)
Pinch of salt

For the filling:
1 carrot, chopped thinly
1 English cucumber, chopped thinly
Avocado, sliced thinly
Rice

Directions:
1. Add the cooked rice, rice vinegar, coconut sugar, and pinch of salt in a bowl and mix them evenly.
2. Prepare the sushi bamboo mat. Place the nori in the middle, add the mixed rice, carrot, cucumber, avocado, place them horizontally, and ready to roll until it gives you a nice shape, and hold them tightly for 30 seconds, cut into small pieces and ready to serve with soy sauce.

Scrambled Tofu Euphoria

Are you vegan or just want to try something different? Scrambled tofu maybe an option.
This meal is so good and filling for your weekend breakfast or for afternoon snacks. I used this Japanese style silken tofu for making it, the texture is softer than the firm tofu and also the silken tofu is easier to cook and the sauce to be absorbed.

The ingredients are so simple and available, everything I bought from Aldi, Woolworths, and my garden. I used nutritional yeast seasoning for my scrambled tofu, which made it, a bit thicker and had a nice consistency. I am not a big fan of spicy food, but if you like spicy, I recommend using fresh green chili. Overall, maybe you can start buying these goodies at the supermarket, and enjoy this meal on your holidays!


(Super easy and delicious scrambled tofu)
Ingredients:

→You will need:

2 Slices of bread 
Nuttelex margarine (optional)
1 Silken tofu
1/2 Onion, chopped
2 Cloves of garlic, chopped
1 Red chili, chopped
1/2 Cup of coriander, chopped
1 tbs olive oil
(Tomato is optional)

→ The sauce:

1 tsp Thai red curry paste
1 tsp chicken stock powder
1/2 tsp turmeric ground
1/2 tsp smoked paprika
1 tsp nutritional yeast
1 tsp soy sauce
Salt and pepper

→Instructions:

1. Mash the tofu. Add the oil to a frying pan, onion, garlic and red chili for 1 to 2 minutes / until it gets brown.
2. Add the mashed tofu, coriander, Thai red curry paste, chicken stock powder, turmeric ground, smoked paprika, nutritional yeast, salt, and pepper, cook this for 1 to 3 minutes / until it smells nice.
3. Toast the bread, add some margarine (optional), and pour the tofu on top of the bread, and ready to serve, enjoy!

Vegan Sunday Breakfast

This is a super delicious and simple vegan dish that you can make at home. You can buy all the ingredients at the vegan grocery stores near you or you can purchase them online. Anytime I see something on special at the shop, I generally buy it straight away and freeze it, because you never know, when you will crave for vegan nuggets, sausages, cheeses, etc. So, it is important to treat yourself with a low budget but still satisfying meal! ;)

(Jumbo hot dogs - Tofurky brand)
This sausage I got it from The Green Edge Vegan Groceries and Cafe. It was on sale, and I purchased this for half price. I used to work there and always stacked up the goodies on the shelves. I kept buying all the food there. I couldn't control myself! I have tried all flavors of Tofurky before, but my favourite is this one. The Tofurky sausages are also tasty for a hotdog with some fried garlic and BBQ sauce on top.

(Classic Blend - Daiya Cheese)
The cheese is to die for. The Daiya cheese brand is so good for any type of pizza and toasties. It melts so well, creamy and delicious. At first, I thought the mozzarella cheese would be good for this. But I want to try to experiment with something new, so I bought this classic blend flavour. That was actually matched very well with my toast. The Daiya cheeses are a bit expensive, but it's worth it! If you are local, I recommend going to the Green Edge Vegan Cafe Brisbane Australia, they are regularly having cheap goodies, including their cheeses and dips. 

"THE INGREDIENTS FOR THE TOAST"

→You will need:
2 pieces of bread
Half of a ripe avocado
Tomatoes (I prefer to use small sweet tomatoes)
Vegan sausage, grilled 
Vegan Daiya cheese
Margarin, salt, and pepper 

→Instruction: 
1. Toast the bread, and grill the sausages for 2 minutes with spray oil, and put the cheese in the microwave for 30s to 1 minutes, until it melts and stretchy and creamy.
2. Add the margarine on top of the toast, mashed avocado, chopped tomatoes, salt, and pepper, grilled vegan sausages melted vegan cheese on top and it is ready to serve! :)

Friday morning, I decided to have a smoothie for breakfast, but also I wanted to have something that can wake me up. So, yeah why not a smoothie with some coffee extract in the morning. This smoothie is so delicious and healthy. I feel awake after having this smoothie, and the fruit tastes are so refreshing. It is different to just drinking coffee with some milk. If you are looking for something different, you need to try this out! 

(2 Essentials: Flaxseed and Chia seeds)
If you are a smoothie lovers, consuming flaxseed and chia seeds are essential supplements for your health. Flaxseed can be used to reduce cholesterol levels, diabetes, obesity, reduce risks of cancer. Also, it has omega-3 fatty acids and a good source of dietary fiber. Flaxseed can also make you less hungry so that you might eat less food. Meanwhile, Chia seeds have also omega-3 and are rich in antioxidants which can help to protect the body from aging, radicals, and cancers. It is gluten-free and can be used as an egg-replacer.

(Using Oat Milk)

Here, I am using my oat milk, because I did not have any soy milk. You can use any plants milk you like. I like using oat and soy milk for my smoothie. I also, put some ice cubs for my smoothie, because I am so extra. This oat milk brand has no added sugar.


(Super easy and tasty for coffee lovers)

→You will need:
1 banana, peeled
1 green apple, chopped (Green apple works better)
1 tsp extract coffee
1 tsp flaxseed
1 tsp chia seeds
1 tsp vanilla extract
350/400 mL oat milk (Depending how much you like)
Ice cubes
(Using dates are highly recommended)

→INSTRUCTION
Add all the ingredients together and blend them for 1 to 2 minutes in your Nutribullet or smoothie blender. After that, it is ready to serve 1 person, enjoy! :)
